Ingredients
- 4 slices of whole grain bread
- 8 slices of deli turkey
- 1 ripe avocado, sliced
- 1/4 cup of mayonnaise
- 1 tablespoon of chipotle peppers in adobo sauce, minced
- 1 teaspoon of lime juice
- 1/4 teaspoon of garlic powder
- Salt and pepper to taste
- 1 tablespoon of butter
Instructions
- In a small bowl, mix together 1/4 cup of mayonnaise, 1 tablespoon of minced chipotle peppers, 1 teaspoon of lime juice, and 1/4 teaspoon of garlic powder to make the spicy chipotle mayo. Season with salt and pepper to taste.
- Spread the chipotle mayo on one side of each slice of whole grain bread.
- Layer 4 slices of deli turkey and sliced avocado on two of the bread slices. Top with the remaining bread slices to make two sandwiches.
- In a skillet over medium heat, melt 1 tablespoon of butter. Place the sandwiches in the skillet and cook for 2-3 minutes on each side, or until the bread is golden brown and the filling is heated through.
