Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine 2 cans of drained tuna, 1/2 cup bread crumbs, 1/4 cup mayonnaise, 1/4 cup chopped onion, 1 beaten egg, 1 teaspoon Dijon mustard, 1/2 teaspoon garlic powder, and 1/4 teaspoon black pepper. Mix well.
  • Form the tuna mixture into 4 patties and place them on a greased baking sheet. Bake for 12-15 minutes, or until golden brown and cooked through.
  • While the tuna patties are baking, prepare the roasted vegetables. In a large bowl, toss 2 cups of mixed vegetables with 2 tablespoons of olive oil, 1/4 cup grated parmesan cheese, 2 cloves of minced garlic, salt, and pepper. Spread the vegetables on a baking sheet in a single layer.
  • Once the tuna patties are done, place the vegetables in the oven and roast for 10-12 minutes, or until they are tender and slightly browned.
