- 2 cans of tuna, drained
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh parsley
- 1 egg
- 1 tablespoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked quinoa
- 2 tablespoons olive oil
Instructions
- In a large bowl, combine 2 cans of drained tuna, 1/2 cup breadcrumbs, 1/4 cup finely chopped red onion, 1/4 cup chopped fresh parsley, 1 egg, 1 tablespoon Dijon mustard, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Form the mixture into 4 patties.
- Heat 2 tablespoons of olive oil in a skillet over medium heat.
- Cook the tuna patties for 3-4 minutes on each side, or until golden brown and heated through.
- Serve the tuna burgers on a bed of 1/2 cup cooked quinoa per plate.
