Tuna and Rice Casserole

Ingredients
- 1 cup of long-grain white rice
- 2 cups of water
- 2 cans of tuna, drained
- 1 cup of frozen peas
- 1/2 cup of chopped onion
- 1/4 cup of butter
- 1/4 cup of all-purpose flour
- 2 cups of milk
- 1 cup of shredded cheddar cheese
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of breadcrumbs
Instructions
- Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.
- In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of rice, reduce heat to low, cover, and simmer for 18 minutes, or until the rice is tender and the water is absorbed.
- In a large bowl, combine the cooked rice, 2 cans of drained tuna, 1 cup of frozen peas, and 1/2 cup of chopped onion. Mix well and transfer to the prepared baking dish.
- In a separate saucepan, melt 1/4 cup of butter over medium heat. Stir in 1/4 cup of all-purpose flour to form a roux. Gradually whisk in 2 cups of milk, stirring constantly until the sauce thickens. Remove from heat and stir in 1 cup of shredded cheddar cheese, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until the cheese is melted.
- Pour the cheese sauce over the tuna and rice mixture in the baking dish, spreading it evenly.
- Sprinkle 1/2 cup of breadcrumbs over the top of the casserole.
- Bake in the preheated oven for 25 minutes, or until the casserole is bubbly and the breadcrumbs are golden brown.
- Allow to cool for a few minutes before serving. Enjoy!
