Tsoureki with Honey Glaze

Ingredients
- 4 cups all-purpose flour
- 1/2 cup white sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 3/4 cup warm milk
- 1 packet active dry yeast
- 3 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground mahlepi (optional)
- 1/2 teaspoon ground mastiha (optional)
- 1/2 cup slivered almonds (optional)
- 1/2 cup honey
- 1/4 cup water
Instructions
- In a small bowl, dissolve the yeast in the warm milk and let it sit for 5 minutes until frothy.
- In a large bowl, combine the flour, sugar, salt, and optional mahlepi and mastiha.
- Add the yeast mixture, melted butter, 2 eggs, and vanilla extract to the dry ingredients. Mix until a dough forms.
- Knead the dough on a floured surface for 10 minutes, or until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
- Punch down the dough and divide it into 2 equal parts. Shape each part into a long rope and braid them together. Place the braided dough on a baking sheet lined with parchment paper, cover with a towel, and let it rise for another 30 minutes.
- Preheat the oven to 350°F (175°C). Beat the remaining egg and brush it over the risen dough. If desired, sprinkle slivered almonds on top.
- Bake for 30-40 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
- While the bread is baking, prepare the honey glaze by combining the honey and water in a small saucepan. Heat over low heat until the honey is melted and the mixture is well combined.
- Once the bread is done, remove it from the oven and immediately brush the honey glaze over the top while it's still warm. Allow the bread to cool before slicing and serving. Enjoy!
