Triple Chocolate Cake

Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup semisweet chocolate chips
- 1 cup heavy cream
- 1/4 cup unsalted butter
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a large bowl, combine 2 cups of flour, 2 cups of sugar, 3/4 cup of cocoa powder, 1 1/2 teaspoons of baking powder, 1 1/2 teaspoons of baking soda, and 1 teaspoon of salt.
- Add 2 eggs, 1 cup of milk, 1/2 cup of vegetable oil, and 2 teaspoons of vanilla extract to the dry ingredients. Mix until well combined.
- Stir in 1 cup of boiling water. The batter will be thin, but this is normal.
- Pour the batter evenly into the prepared cake pans.
- Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and transfer to a wire rack to cool completely.
- To make the ganache, place 1 cup of chocolate chips in a heatproof bowl. In a small saucepan, heat 1 cup of heavy cream and 1/4 cup of unsalted butter over medium heat until it begins to simmer. Pour the hot cream mixture over the chocolate chips and let it sit for 5 minutes. Stir until smooth and glossy.
- Place one cake layer on a serving plate and spread a layer of ganache on top. Repeat with the remaining layers. Use the remaining ganache to frost the top and sides of the cake.
- Refrigerate the cake for at least 30 minutes to allow the ganache to set before serving. Enjoy!
