Tomato Basil Soup with Grilled Cheese Sandwich

Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (28 ounces) whole peeled tomatoes
- 4 cups vegetable broth
- 1/2 cup fresh basil leaves, chopped
- Salt and pepper to taste
- 8 slices of bread
- 8 slices of cheddar cheese
- 4 tablespoons butter
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion and 2 minced garlic cloves. Cook until the onion is soft and translucent, about 5 minutes.
- Add 2 cans of whole peeled tomatoes (with their juices) and 4 cups of vegetable broth to the pot. Bring to a boil, then reduce heat and let it simmer for 15 minutes.
- Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup to a blender and puree in batches, then return to the pot.
- Stir in 1/2 cup of chopped fresh basil leaves. Season with salt and pepper to taste. Keep the soup warm over low heat while preparing the grilled cheese sandwiches.
- For the grilled cheese sandwiches, heat a skillet over medium heat. Spread 4 slices of bread with 2 slices of cheddar cheese each, then top with the remaining 4 slices of bread.
- Spread 1/2 tablespoon of butter on one side of each sandwich. Place the sandwiches, buttered side down, in the skillet. Cook until golden brown and crispy, about 3-4 minutes. Spread the remaining 1/2 tablespoon of butter on the top of each sandwich, then flip and cook until the other side is golden brown and the cheese is melted.
- Cut the grilled cheese sandwiches in half and serve alongside the warm tomato basil soup. Enjoy!
