Ingredients
- 1 block of firm tofu, drained and cubed
- 1 cup of cauliflower florets
- 1 cup of bell peppers, diced
- 1 cup of carrots, sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 1 can (14 oz) of diced tomatoes
- 1/2 cup of plain yogurt
- 2 tablespoons of vegetable oil
- 1 tablespoon of garam masala
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of paprika
- 1/4 teaspoon of cayenne pepper
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large bowl, combine the cubed tofu, cauliflower, bell peppers, and carrots. Add the garam masala, cumin, coriander, turmeric, paprika, cayenne pepper, salt, and pepper. Toss to coat the vegetables and tofu evenly.
