Ingredients
- 1 block of firm tofu, drained and cubed
- 1 cup of broccoli florets
- 1 cup of sliced bell peppers
- 1 cup of sliced carrots
- 1/2 cup of teriyaki sauce
- 2 tablespoons of vegetable oil
- 1 tablespoon of cornstarch
- 1/4 cup of water
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a small bowl, mix 1/2 cup of teriyaki sauce with 1 tablespoon of cornstarch and 1/4 cup of water. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Add the cubed tofu to the skillet and cook for 5-7 minutes, or until golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil and sauté the broccoli, bell peppers, and carrots for 5-7 minutes, or until slightly tender.
- Return the tofu to the skillet with the vegetables and pour the teriyaki sauce mixture over the tofu and vegetables. Stir gently to coat everything in the sauce.
- Cook for an additional 2-3 minutes, or until the sauce has thickened and the tofu and vegetables are heated through.
- Season with salt and pepper to taste.
- Serve the tofu teriyaki and vegetables over cooked rice. Enjoy!
