Instructions

  • In a small bowl, mix 1/2 cup of teriyaki sauce with 1 tablespoon of cornstarch and 1/4 cup of water. Set aside.

  • Add the cubed tofu to the skillet and cook for 5-7 minutes, or until golden brown on all sides. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of vegetable oil and sauté the broccoli, bell peppers, and carrots for 5-7 minutes, or until slightly tender.
  • Return the tofu to the skillet with the vegetables and pour the teriyaki sauce mixture over the tofu and vegetables. Stir gently to coat everything in the sauce.
  • Cook for an additional 2-3 minutes, or until the sauce has thickened and the tofu and vegetables are heated through.
  • Season with salt and pepper to taste.
  • Serve the tofu teriyaki and vegetables over cooked rice. Enjoy!
