  • 1/4 cup fresh cilantro leaves
  • 1/4 cup chopped peanuts
  • 1/4 cup hoisin sauce
  • 1/4 cup peanut sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

Instructions

  • Prepare the tofu by marinating the sliced strips in a mixture of 1 tablespoon soy sauce, 1 tablespoon rice vinegar, and 1 teaspoon sesame oil for 15 minutes.
  • Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds to soften.
  • Lay the wrapper flat on a clean, damp kitchen towel.
  • In a row across the center, place a handful of shredded lettuce, carrots, and cucumber, leaving about 2 inches uncovered on each side.
  • Add a few strips of marinated tofu on top of the vegetables, followed by a sprinkle of fresh mint, cilantro, and chopped peanuts.
  • Fold the uncovered sides inward, then tightly roll the wrapper, beginning at the end with the vegetables and tofu. Repeat with the remaining ingredients.
  • Serve the summer rolls with hoisin sauce and peanut sauce for dipping.
