Tofu Stir-Fry with Broccoli and Brown Rice

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 cups of broccoli florets
- 1 cup of cooked brown rice
- 1/2 cup of cashews
- 3 tablespoons of soy sauce
- 2 tablespoons of sesame oil
- 1 tablespoon of minced ginger
- 2 cloves of garlic, minced
- 1 teaspoon of cornstarch
- 1/4 cup of vegetable broth
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together 3 tablespoons of soy sauce, 2 tablespoons of sesame oil, 1 tablespoon of minced ginger, 2 cloves of minced garlic, and 1 teaspoon of cornstarch. Set aside.
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the broccoli florets and cook for 3-4 minutes, or until they are bright green and slightly tender.
- Add the cooked brown rice to the skillet with the broccoli and stir to combine.
- Pour the soy sauce mixture and 1/4 cup of vegetable broth into the skillet with the rice and broccoli. Stir well and cook for 2-3 minutes, allowing the sauce to thicken.
- Add the cooked tofu back into the skillet and toss to combine with the rice and broccoli.
- Season with salt and pepper to taste.
- Remove the skillet from the heat and transfer the stir-fry to a serving dish.
- Sprinkle 1/2 cup of cashews over the top of the stir-fry before serving.
