Ingredients
- 1 block of firm tofu, pressed and cubed
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of snap peas
- 1 tablespoon of vegetable oil
- 1/4 cup of peanuts, chopped
- 1/4 cup of green onions, chopped
- Cooked rice or noodles, for serving
Instructions
- In a small bowl, whisk together 2 tablespoons of soy sauce and 1 tablespoon of sesame oil. Toss the cubed tofu in the mixture and let it marinate for 10 minutes.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated tofu and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
- In the same skillet, add the sliced red and yellow bell peppers, broccoli florets, and snap peas. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
- Return the tofu to the skillet and toss everything together.
- In a small saucepan, heat the spicy peanut sauce over low heat until warmed through.
- To serve, divide the cooked rice or noodles among 4 bowls. Top with the tofu and vegetable stir-fry, then drizzle with the spicy peanut sauce. Garnish with chopped peanuts and green onions. Enjoy!
