  • 3 green onions, chopped
  • 1/4 cup crushed peanuts
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

  • 8 oz rice noodles
  • 1 block of firm tofu, drained and cubed
  • 2 tbsp vegetable oil
  • 3 cloves of garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 cup bean sprouts
  • 3 green onions, chopped
  • 1/4 cup crushed peanuts
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  • Cook the rice noodles according to package instructions. Drain and set aside.
  • In a large wok or skillet, heat 1 tbsp of vegetable oil over medium-high heat. Add the cubed tofu and cook until golden brown on all sides. Remove from the wok and set aside.
  • In the same wok, add the remaining 1 tbsp of vegetable oil. Add the minced garlic and cook for 1 minute until fragrant.
  • Add the sliced red bell pepper and cook for 2-3 minutes until slightly softened.
  • Add the cooked rice noodles, bean sprouts, and green onions to the wok. Stir-fry for 2-3 minutes until heated through.
  • Return the cooked tofu to the wok and toss everything together.
  • Remove the wok from the heat and stir in the crushed peanuts and chopped cilantro.
  • Serve the Tofu Pad Thai with lime wedges for squeezing over the top.
