Ingredients
- 1 block of firm tofu, drained and cubed
- 2 cups of mixed vegetables (such as bell peppers, broccoli, and carrots)
- 1/2 cup of teriyaki sauce
- 2 tablespoons of vegetable oil
- 1 teaspoon of minced garlic
- 1 teaspoon of grated ginger
- Cooked rice or quinoa, for serving
- Sesame seeds and sliced green onions, for garnish
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the cubed tofu to the skillet and cook for 5-7 minutes, or until golden brown on all sides. Remove the tofu from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil and sauté the mixed vegetables for 3-4 minutes, or until they are tender-crisp.
- Add the minced garlic and grated ginger to the skillet and cook for an additional 1 minute.
- Return the tofu to the skillet and pour the teriyaki sauce over the tofu and vegetables. Stir to coat everything evenly and cook for 2-3 minutes, or until the sauce is heated through.
- Divide the cooked rice or quinoa among 4 bowls and top with the tofu and vegetable teriyaki mixture.
- Garnish with sesame seeds and sliced green onions before serving.
