  • 1 teaspoon of grated ginger
  • Cooked rice or quinoa, for serving
  • Sesame seeds and sliced green onions, for garnish

Instructions

  • In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  • Add the cubed tofu to the skillet and cook for 5-7 minutes, or until golden brown on all sides. Remove the tofu from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of vegetable oil and sauté the mixed vegetables for 3-4 minutes, or until they are tender-crisp.
  • Add the minced garlic and grated ginger to the skillet and cook for an additional 1 minute.
  • Return the tofu to the skillet and pour the teriyaki sauce over the tofu and vegetables. Stir to coat everything evenly and cook for 2-3 minutes, or until the sauce is heated through.
  • Divide the cooked rice or quinoa among 4 bowls and top with the tofu and vegetable teriyaki mixture.
  • Garnish with sesame seeds and sliced green onions before serving.
