Ingredients
- 8 oz of lo mein noodles
- 1 block of firm tofu, drained and cubed
- 2 cups of mixed vegetables (such as bell peppers, broccoli, carrots, and snap peas)
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 1/4 cup of soy sauce
- 2 tablespoons of hoisin sauce
- 1 tablespoon of sesame oil
- 2 tablespoons of vegetable oil
- 1 teaspoon of cornstarch
- 1/4 cup of water
- Salt and pepper to taste
- Sesame seeds and green onions for garnish
Instructions
- Cook the lo mein noodles according to the package instructions. Drain and set aside.
- In a small bowl, whisk together the soy sauce, hoisin sauce, sesame oil, cornstarch, and water. Set aside.
- In a large pan or wok, heat the vegetable oil over medium-high heat. Add the cubed tofu and cook until golden brown on all sides. Remove from the pan and set aside.
- In the same pan, add a bit more oil if needed and sauté the garlic and ginger until fragrant.
- Add the mixed vegetables to the pan and stir-fry until they are tender-crisp.
- Return the tofu to the pan and add the cooked lo mein noodles.
- Pour the sauce over the tofu and vegetable mixture, tossing everything together until well coated and heated through.
- Season with salt and pepper to taste.
- Garnish with sesame seeds and chopped green onions before serving.
