  • 1 teaspoon of fresh ginger, grated

  • Salt and pepper to taste

  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  • In a small bowl, mix together 3 tablespoons of soy sauce, 2 tablespoons of hoisin sauce, minced garlic, and grated ginger. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
  • Return the tofu to the skillet with the vegetables. Pour the sauce over the tofu and vegetables, and toss to coat everything evenly. Cook for an additional 2-3 minutes to heat through.
  • Add the cashews to the skillet and toss to combine with the tofu and vegetables. Season with salt and pepper to taste.
  • Drizzle 1 tablespoon of sesame oil over the stir-fry and toss to combine.
