Ingredients
- 1 block of firm tofu, drained and cubed
- 2 cups of mixed vegetables (bell peppers, broccoli, snap peas, carrots)
- 1/2 cup of cashews
- 3 tablespoons of soy sauce
- 2 tablespoons of hoisin sauce
- 1 tablespoon of sesame oil
- 2 cloves of garlic, minced
- 1 teaspoon of fresh ginger, grated
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- In a small bowl, mix together 3 tablespoons of soy sauce, 2 tablespoons of hoisin sauce, minced garlic, and grated ginger. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
