  • 14 oz firm tofu, drained and cubed
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp cornstarch
  • 1/4 cup vegetable broth
  • 2 tbsp vegetable oil
  • 2 green onions, chopped
  • 1/4 tsp red pepper flakes (optional)
  • Cooked rice or noodles for serving

  • 1 tsp ginger, grated
  • 1 tbsp cornstarch
  • 1/4 cup vegetable broth
  • 2 tbsp vegetable oil
  • 2 green onions, chopped
  • 1/4 tsp red pepper flakes (optional)
  • Cooked rice or noodles for serving

Instructions

  • In a small bowl, whisk together 2 tbsp soy sauce, 1 tbsp sesame oil, garlic, ginger, and cornstarch. Set aside.
  • Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tbsp of vegetable oil. Add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
  • Pour in the vegetable broth and the soy sauce mixture. Stir well and cook for another 2-3 minutes until the sauce thickens and coats the vegetables.
  • Add the cooked tofu back into the skillet and toss to combine with the vegetables and sauce. Cook for an additional 1-2 minutes to heat through.
  • Remove from heat and drizzle with 1 tbsp of sesame oil. Sprinkle with chopped green onions and red pepper flakes if using.
  • Serve the tofu and mixed vegetable stir-fry over cooked rice or noodles. Enjoy!
