Instructions

  • Preheat the oven to 250 degrees F. Line a large baking sheet with parchment paper.
  • Pop the popcorn kernels using your preferred method and place them in a large mixing bowl.
  • In a medium saucepan, melt 1 cup of unsalted butter over medium heat.
  • Stir in 1 cup of brown sugar, 1/4 cup of light corn syrup, and 1/2 teaspoon of salt. Bring the mixture to a boil, stirring constantly.
  • Once boiling, let the mixture cook without stirring for 4-5 minutes. The mixture should reach 285 degrees F on a candy thermometer.
  • Remove the saucepan from the heat and quickly stir in 1/2 teaspoon of baking soda and 1 teaspoon of vanilla extract. The mixture will bubble up, so be careful.
  • Pour the toffee mixture over the popcorn in the mixing bowl and gently toss to coat the popcorn evenly.
  • Spread the toffee-coated popcorn onto the prepared baking sheet in an even layer.
  • Bake in the preheated oven for 45 minutes, stirring every 15 minutes to ensure even coating and prevent burning.
  • Remove the popcorn from the oven and allow it to cool completely on the baking sheet before breaking it into pieces.
  • Once cooled, the toffee popcorn is ready to enjoy!
