  • 1 1/2 cups of crushed ladyfingers
  • 1/4 cup of melted butter
  • 24 ounces of cream cheese, softened

  • 1 teaspoon of vanilla extract

Instructions

  • Preheat the oven to 325°F. Grease a 9-inch springform pan.
  • In a small bowl, mix the crushed ladyfingers with the melted butter. Press the mixture into the bottom of the prepared pan to form a crust.
  • In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream.
  • Pour half of the cheesecake batter over the ladyfinger crust in the pan.
  • In a separate small bowl, combine the cooled espresso or coffee with the coffee liqueur. Dip the remaining ladyfingers into the coffee mixture and arrange them over the cheesecake batter in the pan.
  • Pour the remaining cheesecake batter over the ladyfingers, spreading it evenly with a spatula.
  • Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
  • Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  • Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.
  • Before serving, dust the top of the cheesecake with cocoa powder. Slice and enjoy!
