Ingredients
- 1 lb of large shrimp, peeled and deveined
- 2 tbsp of red curry paste
- 1 can of coconut milk
- 1 red bell pepper, sliced
- 1 small onion, sliced
- 1 cup of snap peas
- 2 tbsp of fish sauce
- 1 tbsp of brown sugar
- 1 tbsp of vegetable oil
- 1/4 cup of fresh basil leaves
- Cooked jasmine rice, for serving
Instructions
- In a large skillet, heat 1 tbsp of vegetable oil over medium heat.
- Add 2 tbsp of red curry paste and cook for 1 minute, stirring constantly.
- Pour in 1 can of coconut milk and stir to combine with the curry paste.
- Add 1 sliced red bell pepper, 1 sliced onion, and 1 cup of snap peas to the skillet. Cook for 3-4 minutes until the vegetables are slightly tender.
- Stir in 2 tbsp of fish sauce and 1 tbsp of brown sugar.
- Add the peeled and deveined shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque.
- Once the shrimp are cooked, remove the skillet from the heat and stir in 1/4 cup of fresh basil leaves.
- Serve the Thai red curry shrimp over cooked jasmine rice and enjoy!
