  • In a large skillet, heat 1 tbsp of vegetable oil over medium heat.
  • Add 2 tbsp of red curry paste and cook for 1 minute, stirring constantly.
  • Pour in 1 can of coconut milk and stir to combine with the curry paste.
  • Add 1 sliced red bell pepper, 1 sliced onion, and 1 cup of snap peas to the skillet. Cook for 3-4 minutes until the vegetables are slightly tender.
  • Stir in 2 tbsp of fish sauce and 1 tbsp of brown sugar.
  • Add the peeled and deveined shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque.
  • Once the shrimp are cooked, remove the skillet from the heat and stir in 1/4 cup of fresh basil leaves.
  • Serve the Thai red curry shrimp over cooked jasmine rice and enjoy!
