Ingredients
- 2 large sweet potatoes, peeled and grated
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup bread crumbs
- 1/4 cup finely chopped red onion
- 1/4 cup chopped cilantro
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 burger buns
- Toppings of your choice (lettuce, tomato, avocado, salsa, etc.)
Instructions
- In a large bowl, combine 2 cups of grated sweet potatoes, 1 can of black beans, 1/2 cup bread crumbs, 1/4 cup red onion, 1/4 cup cilantro, 1 tsp cumin, 1 tsp chili powder, 1/2 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper.
- Mix the ingredients until well combined, then form the mixture into 4 patties.
- Heat a non-stick skillet over medium heat and lightly coat with oil. Cook the patties for 4-5 minutes on each side, or until golden brown and heated through.
- Toast the burger buns in the skillet or in a toaster.
- Assemble the burgers by placing the patties on the buns and adding your choice of toppings.
