- 1 pound boneless, skinless chicken breasts, cooked and shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 cup salsa
- 1 cup sour cream
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 cups shredded Mexican blend cheese
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Tortilla chips for serving
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large bowl, combine the shredded chicken, black beans, corn, salsa, sour cream, chili powder, cumin, garlic powder, onion powder, and 1 cup of shredded cheese. Season with salt and pepper to taste.
- Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining 1 cup of shredded cheese on top.
- Bake in the preheated oven for 30-35 minutes, or until the casserole is hot and bubbly, and the cheese is melted and golden brown.
- Remove from the oven and let it cool for 5 minutes. Sprinkle with chopped cilantro before serving.
