  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 cups shredded Mexican blend cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Tortilla chips for serving

  • Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • In a large bowl, combine the shredded chicken, black beans, corn, salsa, sour cream, chili powder, cumin, garlic powder, onion powder, and 1 cup of shredded cheese. Season with salt and pepper to taste.
  • Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining 1 cup of shredded cheese on top.
  • Bake in the preheated oven for 30-35 minutes, or until the casserole is hot and bubbly, and the cheese is melted and golden brown.
  • Remove from the oven and let it cool for 5 minutes. Sprinkle with chopped cilantro before serving.
