  • 1 cup of teriyaki sauce
  • 2 tablespoons of vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 cup of snap peas
  • 1/2 cup of sliced carrots
  • 3 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • Salt and pepper to taste
  • Cooked white rice for serving

Instructions

  • In a large bowl, marinate the chicken breasts in 1/2 cup of teriyaki sauce for at least 30 minutes.
  • Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
  • Add the marinated chicken breasts to the skillet and cook for 6-7 minutes on each side, or until fully cooked. Remove from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium heat.
  • Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
  • Add the sliced bell peppers, broccoli, snap peas, and carrots to the skillet. Stir-fry for 4-5 minutes, or until the vegetables are tender-crisp.
  • Pour in the remaining 1/2 cup of teriyaki sauce and stir to coat the vegetables.
  • Slice the cooked chicken breasts and add them back to the skillet, tossing to combine with the vegetables and sauce. Cook for an additional 2-3 minutes to heat through.
  • Season with salt and pepper to taste.
  • Serve the teriyaki chicken and stir-fried vegetables over cooked white rice. Enjoy!
