  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb mixed vegetables (bell peppers, zucchini, red onion, cherry tomatoes)
  • 2 tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste

  • 2 tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a bowl, combine the cubed Tasso meat with olive oil, paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, salt, and black pepper. Toss to coat the meat evenly.
  • Spread the seasoned Tasso meat on a baking sheet and roast in the preheated oven for 25-30 minutes, or until the meat is browned and crispy.
  • While the Tasso meat is roasting, prepare the vegetables. Cut the bell peppers, zucchini, and red onion into bite-sized pieces. Place the vegetables and cherry tomatoes on a separate baking sheet.
  • In a small bowl, whisk together balsamic vinegar, minced garlic, and chopped parsley. Drizzle the mixture over the vegetables and toss to coat evenly.
  • Roast the vegetables in the oven for 20-25 minutes, or until they are tender and slightly caramelized.
  • Once the Tasso meat and vegetables are done, remove them from the oven and season with salt and pepper to taste.
  • Serve the roasted Tasso meat alongside the vegetables and enjoy!
