Ingredients
- 1 lb pork belly, skin-on, cut into 1-inch pieces
- 1/4 cup apple cider vinegar
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp smoked paprika
- 1 tsp cayenne pepper
- 1/2 cup barbecue sauce
- Salt to taste
- Oil for frying
Instructions
- In a large bowl, combine the apple cider vinegar, soy sauce, brown sugar, smoked paprika, cayenne pepper, and barbecue sauce.
- Add the pork belly pieces to the bowl and toss to coat. Marinate for at least 30 minutes, or overnight for best results.
- Heat oil in a deep pot or fryer to 375°F (190°C).
- Carefully add the marinated pork belly pieces to the hot oil and fry in batches for 8-10 minutes, or until golden and crispy.
- Remove the pork cracklings from the oil and drain on a paper towel-lined plate. Season with salt while still hot.
- Transfer the crispy pork cracklings to a large bowl and drizzle with extra barbecue sauce. Toss to coat evenly.
