Taiwanese Beef Noodle Soup

Ingredients
- 2 lbs beef shank, cut into chunks
- 8 cups beef broth
- 4 cups water
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 inch ginger, sliced
- 2 tomatoes, chopped
- 3 tbsp soy sauce
- 2 tbsp rice wine
- 2 tbsp rock sugar
- 2 star anise
- 2 cinnamon sticks
- 3-4 pieces dried tangerine peel
- 1 tsp five-spice powder
- 1/4 cup chili bean sauce
- 1 lb fresh thick wheat noodles
- Salt, to taste
- Green onions, chopped, for garnish
- Bok choy, blanched, for serving
Instructions
- In a large pot, bring the beef broth and water to a boil.
- Add the beef shank chunks and boil for 5 minutes. Remove the beef and rinse under cold water to remove any impurities.
- Clean the pot and return the beef shank to the pot. Add the onion, garlic, ginger, tomatoes, soy sauce, rice wine, rock sugar, star anise, cinnamon sticks, dried tangerine peel, five-spice powder, and chili bean sauce.
- Pour in the beef broth and water, bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until the beef is tender.
- While the beef is simmering, cook the noodles according to package instructions. Drain and set aside.
- Once the beef is tender, season the soup with salt to taste.
- To serve, divide the noodles among serving bowls. Ladle the beef and soup over the noodles. Garnish with chopped green onions and serve with blanched bok choy on the side.
