Ingredients
- 2 pounds ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 cup frozen corn
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 large sweet potatoes, peeled and cubed
- 1/4 cup butter
- 1/4 cup milk
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and minced garlic, and cook until the onion is soft.
- Stir in the frozen peas, frozen corn, beef broth, tomato paste, Worcestershire sauce, dried thyme, salt, and pepper. Simmer for 10 minutes, then transfer the mixture to a 9x13 inch baking dish.
- Meanwhile, place the sweet potatoes in a large pot and cover with water. Bring to a boil and cook until the sweet potatoes are tender, about 15 minutes. Drain and mash with the butter and milk until smooth.
- Spread the mashed sweet potatoes over the beef mixture in the baking dish, and sprinkle with the shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the sweet potato topping is golden and the filling is bubbly.
- Allow to cool for a few minutes before serving. Enjoy!
