Ingredients
- 1 1/2 cups of mashed sweet potatoes
- 3/4 cup of brown sugar
- 1/2 teaspoon of salt
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of ground ginger
- 1/4 teaspoon of ground nutmeg
- 2 eggs
- 1 cup of evaporated milk
- 1 teaspoon of vanilla extract
- 1 unbaked 9-inch pie crust
Instructions
- Preheat the oven to 425 degrees F.
- In a large mixing bowl, combine 1 1/2 cups of mashed sweet potatoes, 3/4 cup of brown sugar, 1/2 teaspoon of salt, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground ginger, and 1/4 teaspoon of ground nutmeg.
- In a separate bowl, beat 2 eggs and mix in 1 cup of evaporated milk and 1 teaspoon of vanilla extract.
- Gradually add the egg mixture to the sweet potato mixture, stirring until well combined.
- Pour the filling into the unbaked pie crust.
- Bake at 425 degrees F for 15 minutes, then reduce the temperature to 350 degrees F and continue baking for 40-45 minutes, or until a knife inserted near the center comes out clean.
- Allow the pie to cool before serving. Enjoy!
