Ingredients
- 2 cups of grated sweet potatoes
- 1/4 cup of all-purpose flour
- 1/4 cup of cornmeal
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of paprika
- 1/4 teaspoon of garlic powder
- 1/4 cup of chopped green onions
- 1/4 cup of milk
- 1 egg
- Vegetable oil for frying
Instructions
- In a large bowl, combine 2 cups of grated sweet potatoes, 1/4 cup of all-purpose flour, 1/4 cup of cornmeal, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1/4 teaspoon of paprika, and 1/4 teaspoon of garlic powder.
- Stir in 1/4 cup of chopped green onions, 1/4 cup of milk, and 1 beaten egg until well combined.
- Heat vegetable oil in a large skillet over medium-high heat.
- Scoop about 1/4 cup of the sweet potato mixture and carefully drop it into the hot oil, flattening it slightly with a spatula. Cook in batches, making sure not to overcrowd the skillet.
- Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
- Serve the sweet potato fritters hot with your favorite dipping sauce or as a side dish. Enjoy!
