Instructions

  • In a large bowl, combine 2 cups of grated sweet potatoes, 1/4 cup of all-purpose flour, 1/4 cup of cornmeal, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1/4 teaspoon of paprika, and 1/4 teaspoon of garlic powder.
  • Stir in 1/4 cup of chopped green onions, 1/4 cup of milk, and 1 beaten egg until well combined.
  • Heat vegetable oil in a large skillet over medium-high heat.
  • Scoop about 1/4 cup of the sweet potato mixture and carefully drop it into the hot oil, flattening it slightly with a spatula. Cook in batches, making sure not to overcrowd the skillet.
  • Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
