Ingredients
- 2 cups of grated sweet potatoes
- 1/4 cup of all-purpose flour
- 1/4 cup of cornmeal
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of paprika
- 1/4 teaspoon of garlic powder
- 1/4 cup of chopped green onions
- 1/4 cup of milk
- 1 egg
- Vegetable oil for frying
Instructions
- In a large bowl, combine 2 cups of grated sweet potatoes, 1/4 cup of all-purpose flour, 1/4 cup of cornmeal, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1/4 teaspoon of paprika, and 1/4 teaspoon of garlic powder.
- Stir in 1/4 cup of chopped green onions, 1/4 cup of milk, and 1 beaten egg until well combined.
- Heat vegetable oil in a large skillet over medium-high heat.
- Scoop about 1/4 cup of the sweet potato mixture and carefully drop it into the hot oil, flattening it slightly with a spatula. Cook in batches, making sure not to overcrowd the skillet.
- Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
- Serve the sweet potato fritters hot with your favorite dipping sauce or as a side dish. Enjoy!
Sweet potato fritters have a rich history dating back to the Caribbean, where they are a beloved traditional dish. These delectable fritters are made by combining grated sweet potatoes with flour, sugar, and spices, then frying them to golden perfection. Renowned chefs like Marcus Samuelsson have put their own spin on this classic recipe, adding unique flavors and textures. In the Southern United States, sweet potato fritters are a staple at soul food restaurants, often served with a drizzle of honey or a sprinkle of powdered sugar. For the best sweet potato fritters, ensure the sweet potatoes are fresh and the spices are well-balanced.
