  • 1/2 teaspoon of cumin
  • Salt and pepper to taste

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the diced sweet potatoes to the skillet and cook for 8-10 minutes, stirring occasionally, until they are tender and lightly browned. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the diced onion and minced garlic for 2-3 minutes, until they are softened and fragrant.
  • Add the chopped kale to the skillet and cook for 5-6 minutes, stirring occasionally, until the kale is wilted and tender.
  • Return the cooked sweet potatoes to the skillet and sprinkle the paprika, cumin, salt, and pepper over the mixture. Stir well to combine all the ingredients and cook for an additional 2-3 minutes to allow the flavors to meld together.
  • Remove the skillet from the heat and serve the sweet potato and kale hash hot. Enjoy!
