Sweet Potato and Chickpea Burger

Ingredients
- 2 cups of mashed sweet potatoes
- 1 can (15 oz) of chickpeas, drained and rinsed
- 1/2 cup of breadcrumbs
- 1/4 cup of finely chopped red onion
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 burger buns
- Toppings of your choice (lettuce, tomato, avocado, etc.)
Instructions
- In a large mixing bowl, combine 2 cups of mashed sweet potatoes, 1 can of chickpeas, 1/2 cup of breadcrumbs, 1/4 cup of finely chopped red onion, 2 cloves of minced garlic, 1 teaspoon of cumin, 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Using a potato masher or fork, mash the mixture until well combined and the chickpeas are slightly mashed.
- Divide the mixture into 4 equal portions and shape each portion into a patty.
- Heat a non-stick skillet over medium heat and lightly coat with oil. Cook the patties for 4-5 minutes on each side, or until golden brown and heated through.
- Toast the burger buns in the skillet or in a toaster until lightly golden.
- Assemble the burgers by placing the patties on the bottom half of each bun and adding your choice of toppings.
- Serve the sweet potato and chickpea burgers immediately and enjoy!
