  • 1/2 cup of breadcrumbs
  • 1/4 cup of finely chopped red onion
  • 2 cloves of garlic, minced

  • 1 teaspoon of paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 4 burger buns
  • Toppings of your choice (lettuce, tomato, avocado, etc.)

Instructions

  • In a large mixing bowl, combine 2 cups of mashed sweet potatoes, 1 can of chickpeas, 1/2 cup of breadcrumbs, 1/4 cup of finely chopped red onion, 2 cloves of minced garlic, 1 teaspoon of cumin, 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Using a potato masher or fork, mash the mixture until well combined and the chickpeas are slightly mashed.
  • Divide the mixture into 4 equal portions and shape each portion into a patty.
  • Heat a non-stick skillet over medium heat and lightly coat with oil. Cook the patties for 4-5 minutes on each side, or until golden brown and heated through.
  • Toast the burger buns in the skillet or in a toaster until lightly golden.
  • Assemble the burgers by placing the patties on the bottom half of each bun and adding your choice of toppings.
  • Serve the sweet potato and chickpea burgers immediately and enjoy!
