Sweet and Sour Shrimp Stir-Fry

Ingredients
- 1 pound of large shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 1 cup of pineapple chunks
- 1/4 cup of ketchup
- 1/4 cup of rice vinegar
- 3 tablespoons of brown sugar
- 2 tablespoons of soy sauce
- 1 tablespoon of cornstarch
- 2 cloves of garlic, minced
- 1 teaspoon of grated ginger
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a small bowl, whisk together 1/4 cup of ketchup, 1/4 cup of rice vinegar, 3 tablespoons of brown sugar, 2 tablespoons of soy sauce, and 1 tablespoon of cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and stir-fry for 2-3 minutes until pink and opaque. Remove the shrimp from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Stir in 2 cloves of minced garlic and 1 teaspoon of grated ginger, and cook for 1 minute until fragrant.
- Add the sliced red and green bell peppers, along with the sliced onion, to the skillet. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
- Pour the ketchup and vinegar mixture into the skillet with the vegetables. Stir well and bring to a simmer. Cook for 2-3 minutes until the sauce thickens.
- Add the cooked shrimp and pineapple chunks to the skillet. Stir to coat everything in the sweet and sour sauce. Cook for an additional 1-2 minutes to heat through.
- Season the stir-fry with salt and pepper to taste. Remove from heat.
- Serve the sweet and sour shrimp stir-fry over cooked rice. Enjoy!
