  • 1 teaspoon of grated ginger
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  • In a small bowl, whisk together 1/4 cup of ketchup, 1/4 cup of rice vinegar, 3 tablespoons of brown sugar, 2 tablespoons of soy sauce, and 1 tablespoon of cornstarch. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and stir-fry for 2-3 minutes until pink and opaque. Remove the shrimp from the skillet and set aside.
  • Add the remaining 1 tablespoon of vegetable oil to the skillet. Stir in 2 cloves of minced garlic and 1 teaspoon of grated ginger, and cook for 1 minute until fragrant.
  • Add the sliced red and green bell peppers, along with the sliced onion, to the skillet. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
  • Pour the ketchup and vinegar mixture into the skillet with the vegetables. Stir well and bring to a simmer. Cook for 2-3 minutes until the sauce thickens.
  • Add the cooked shrimp and pineapple chunks to the skillet. Stir to coat everything in the sweet and sour sauce. Cook for an additional 1-2 minutes to heat through.
  • Season the stir-fry with salt and pepper to taste. Remove from heat.
