Ingredients
- 3 cups rolled oats
- 1/2 cup chopped nuts (almonds, walnuts, or pecans)
- 1/4 cup unsweetened shredded coconut
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/4 cup coconut oil
- 1/4 cup sugar-free maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, combine 3 cups of rolled oats, 1/2 cup of chopped nuts, 1/4 cup of unsweetened shredded coconut, 1/4 cup of sunflower seeds, and 1/4 cup of pumpkin seeds.
- In a small saucepan, melt 1/4 cup of coconut oil. Remove from heat and stir in 1/4 cup of sugar-free maple syrup, 1 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of salt.
- Pour the liquid mixture over the dry ingredients and stir until well combined.
- Spread the granola mixture onto the prepared baking sheet in an even layer.
- Bake for 20-25 minutes, stirring once halfway through, until the granola is golden brown and crisp.
- Allow the granola to cool completely on the baking sheet before transferring to an airtight container for storage.
- Serve with yogurt, milk, or enjoy as a snack.
