Instructions

  • Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, combine 3 cups of rolled oats, 1/2 cup of chopped nuts, 1/4 cup of unsweetened shredded coconut, 1/4 cup of sunflower seeds, and 1/4 cup of pumpkin seeds.
  • In a small saucepan, melt 1/4 cup of coconut oil. Remove from heat and stir in 1/4 cup of sugar-free maple syrup, 1 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of salt.
  • Pour the liquid mixture over the dry ingredients and stir until well combined.
  • Spread the granola mixture onto the prepared baking sheet in an even layer.
  • Bake for 20-25 minutes, stirring once halfway through, until the granola is golden brown and crisp.
