Instructions

  • In a large bowl, whisk together 2 cups of heavy cream, 1 cup of whole milk, 3/4 cup of sugar, and 1 teaspoon of vanilla extract until the sugar is dissolved.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency, about 20-25 minutes.
  • While the ice cream is churning, make the strawberry swirl. In a small saucepan, combine 1 cup of sliced strawberries, 1/4 cup of sugar, and 2 tablespoons of water. Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens, about 10 minutes. Remove from heat and let it cool.
  • Once the ice cream reaches a soft-serve consistency, spoon half of it into a freezer-safe container. Drizzle half of the strawberry swirl over the ice cream. Repeat with the remaining ice cream and strawberry swirl, using a knife to gently swirl the mixture together.
  • Cover the container and freeze the ice cream for at least 4 hours, or until firm.
