Strawberry Rhubarb Tart

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup confectioners' sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 3 cups fresh rhubarb, chopped
- 2 cups fresh strawberries, hulled and sliced
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 1 egg, beaten
Instructions
- Preheat the oven to 375°F (190°C).
- In a food processor, combine 1 1/2 cups of flour, 1/2 cup confectioners' sugar, and 1/4 teaspoon of salt. Pulse to mix.
- Add the cold, cubed butter to the food processor and pulse until the mixture resembles coarse crumbs.
- Press the mixture into the bottom and up the sides of a 9-inch tart pan with a removable bottom. Place the pan in the refrigerator to chill for 15 minutes.
- In a large bowl, combine 3 cups of chopped rhubarb, 2 cups of sliced strawberries, 1 cup of granulated sugar, 1/4 cup of cornstarch, and 1 teaspoon of vanilla extract. Toss to coat the fruit evenly.
- Remove the chilled tart shell from the refrigerator and pour the fruit mixture into it.
- Brush the edges of the tart crust with the beaten egg.
- Bake the tart in the preheated oven for 40-45 minutes, or until the crust is golden and the filling is bubbly.
- Allow the tart to cool before slicing and serving. Enjoy!
