Instructions

  • In a food processor, pulse the Oreo cookies until they are finely crushed.
  • Transfer the crushed cookies to a large mixing bowl and pour in the melted butter. Stir until the cookie crumbs are evenly coated with the butter.
  • Press half of the cookie mixture into the bottom of a 9x13 inch dish to form the first layer of the cake.
  • In a separate bowl, toss the sliced strawberries with the granulated sugar. Let them sit for about 15 minutes to release their juices.
  • In the meantime, using a hand mixer or stand mixer, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
  • Spread half of the whipped cream over the cookie layer in the dish.
  • Arrange half of the sliced strawberries on top of the whipped cream layer.
  • Repeat the layers with the remaining cookie mixture, whipped cream, and sliced strawberries.
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the cake to set.
  • Before serving, garnish with additional sliced strawberries and Oreo crumbs if desired.
