Ingredients
- 1 package of Oreo cookies (about 36 cookies)
- 1/2 cup of unsalted butter, melted
- 1 pound of fresh strawberries, hulled and sliced
- 1/4 cup of granulated sugar
- 2 cups of heavy cream
- 1/4 cup of powdered sugar
- 1 teaspoon of vanilla extract
Instructions
- In a food processor, pulse the Oreo cookies until they are finely crushed.
- Transfer the crushed cookies to a large mixing bowl and pour in the melted butter. Stir until the cookie crumbs are evenly coated with the butter.
- Press half of the cookie mixture into the bottom of a 9x13 inch dish to form the first layer of the cake.
- In a separate bowl, toss the sliced strawberries with the granulated sugar. Let them sit for about 15 minutes to release their juices.
- In the meantime, using a hand mixer or stand mixer, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
- Spread half of the whipped cream over the cookie layer in the dish.
- Arrange half of the sliced strawberries on top of the whipped cream layer.
- Repeat the layers with the remaining cookie mixture, whipped cream, and sliced strawberries.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the cake to set.
- Before serving, garnish with additional sliced strawberries and Oreo crumbs if desired.
