Instructions

  • Preheat the oven to 325°F. Grease a 9-inch springform pan.
  • In a bowl, mix 2 cups of crushed Oreo cookies with 1/4 cup of melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
  • In a large bowl, beat 24 oz of softened cream cheese, 1 cup of sugar, and 1 tsp of vanilla extract until smooth.
  • Add 4 eggs, one at a time, mixing well after each addition. Stir in 1/2 cup of sour cream and 1/2 cup of strawberry puree.
  • Gradually add 1/4 cup of all-purpose flour and mix until smooth. Fold in 1 cup of chopped strawberries.
  • Pour the batter over the Oreo crust in the pan. Smooth the top with a spatula.
  • Bake in the preheated oven for 55-60 minutes, or until the center is almost set.
  • Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  • Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight, before serving.
