Starry Night Cupcake

Ingredients
- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/4 cup boiling water
- 1/2 cup powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon blue food coloring
- 1/2 teaspoon black food coloring
- Edible silver star sprinkles
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a medium bowl, whisk together 1 3/4 cups of flour, 1 1/2 teaspoons of baking powder, and 1/2 teaspoon of salt.
- In a large bowl, cream 1/2 cup of softened butter with 1 cup of granulated sugar until light and fluffy. Add 2 eggs, one at a time, beating well after each addition. Stir in 1 teaspoon of vanilla extract.
- Gradually add the flour mixture to the wet ingredients, alternating with 1/2 cup of milk, beginning and ending with the flour mixture. Mix until just combined.
- In a small bowl, mix 1/4 cup of unsweetened cocoa powder with 1/4 cup of boiling water to create a smooth chocolate paste. Gently fold the chocolate paste into the batter until fully incorporated.
- Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely before decorating.
- In a small bowl, whisk together 1/2 cup of powdered sugar and 2-3 tablespoons of milk to create a smooth glaze. Divide the glaze into two separate bowls and add 1/2 teaspoon of blue food coloring to one bowl and 1/2 teaspoon of black food coloring to the other. Mix until the desired colors are achieved.
- Using a small spoon, drizzle the blue glaze over the top of each cupcake, allowing it to drip down the sides. Repeat with the black glaze, creating a starry night effect on top of each cupcake.
- Sprinkle edible silver star sprinkles over the top of each cupcake to complete the starry night design.
