Ingredients
- 2 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder

- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- Gel food coloring in blue, purple, and black
Instructions
- Preheat the oven to 350°F. Grease and flour three 8-inch round cake pans.
- In a large bowl, combine 2 cups of flour, 1 3/4 cups sugar, 3/4 cup cocoa powder, 1 1/2 teaspoons baking powder, 1 1/2 teaspoons baking soda, and 1 teaspoon salt.
- Add 2 eggs, 1 cup milk, 1/2 cup vegetable oil, and 2 teaspoons vanilla extract to the dry ingredients. Mix until well combined.
- Stir in 1 cup of boiling water. The batter will be thin, but that's okay.
- Divide the batter evenly among the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- To make the frosting, beat 1 cup of softened butter until creamy. Gradually add 4 cups of powdered sugar, alternating with 1/4 cup of heavy cream. Mix in 1 teaspoon of vanilla extract until smooth and creamy.
- Divide the frosting into three bowls. Tint one bowl with blue gel food coloring, one with purple, and one with black. Mix until the colors are well blended and resemble a galaxy pattern.
- Place one cake layer on a serving plate. Spread a layer of blue frosting on top. Add the second layer and cover with purple frosting. Top with the final layer and frost the entire cake with the black frosting, creating a galaxy effect.
