Instructions

  • Soften the cherry ice cream by letting it sit at room temperature for 10-15 minutes.
  • Line a 9x5 inch loaf pan with plastic wrap, leaving an overhang on all sides.
  • Spread the softened cherry ice cream evenly into the bottom of the pan.
  • Sprinkle half of the chopped nuts over the cherry ice cream layer.
  • Drizzle half of the rum over the nuts.
  • Place the pan in the freezer and let the cherry ice cream layer freeze for 1 hour.
  • Soften the pistachio ice cream and spread it evenly over the frozen cherry layer.
  • Sprinkle the remaining chopped nuts over the pistachio ice cream layer.
  • Drizzle the remaining rum over the nuts.
  • Place the pan in the freezer and let the pistachio ice cream layer freeze for 1 hour.
  • Soften the chocolate ice cream and spread it evenly over the frozen pistachio layer.
  • Sprinkle the mini chocolate chips and chopped maraschino cherries over the top of the chocolate ice cream layer.
  • Cover the pan with plastic wrap and freeze for at least 2 hours, or until firm.
  • To serve, lift the spumoni out of the pan using the plastic wrap overhang, and place it on a cutting board.
  • Slice into thick slices and serve immediately. Enjoy!
