Ingredients
- 8 cups of fresh spinach leaves
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of red onion, thinly sliced
- 1/4 cup of feta cheese, crumbled
- 1/4 cup of toasted pine nuts
- 1/4 cup of olive oil
- 2 tablespoons of balsamic vinegar
- 1 teaspoon of Dijon mustard
- 1 teaspoon of honey
- Salt and pepper to taste
Instructions
- Wash and dry 8 cups of fresh spinach leaves, then place them in a large salad bowl.
- Add 1/2 cup of halved cherry tomatoes, 1/4 cup of thinly sliced red onion, 1/4 cup of crumbled feta cheese, and 1/4 cup of toasted pine nuts to the bowl with the spinach.
- In a small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of balsamic vinegar, 1 teaspoon of Dijon mustard, and 1 teaspoon of honey to make the vinaigrette dressing. Season with salt and pepper to taste.
- Drizzle the vinaigrette over the salad and toss gently to coat the ingredients evenly.
