Spinach Lentil Quinoa Soup

Ingredients
- 1 cup quinoa
- 1 cup green or brown lentils
- 8 cups vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 6 cups fresh spinach, chopped
- Juice of 1 lemon
Instructions
- Rinse the quinoa and lentils under cold water. Set aside.
- In a large pot, sauté the onion and garlic in a little bit of vegetable broth until softened.
- Add the cumin, paprika, turmeric, and cayenne pepper to the pot. Stir and cook for 1-2 minutes.
- Pour in the remaining vegetable broth and add the quinoa and lentils. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the quinoa and lentils are tender.
- Stir in the chopped spinach and cook for an additional 5 minutes, until the spinach is wilted.
- Add the lemon juice and season with salt and pepper to taste.
- Serve hot and enjoy!
