  • 1 cup green or brown lentils
  • 8 cups vegetable broth

  • Salt and pepper to taste
  • 6 cups fresh spinach, chopped
  • Juice of 1 lemon

Instructions

  • Rinse the quinoa and lentils under cold water. Set aside.
  • In a large pot, sauté the onion and garlic in a little bit of vegetable broth until softened.
  • Add the cumin, paprika, turmeric, and cayenne pepper to the pot. Stir and cook for 1-2 minutes.
  • Pour in the remaining vegetable broth and add the quinoa and lentils. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the quinoa and lentils are tender.
  • Stir in the chopped spinach and cook for an additional 5 minutes, until the spinach is wilted.
  • Add the lemon juice and season with salt and pepper to taste.
  • Serve hot and enjoy!
