Instructions

  • In a small bowl, marinate the shrimp with 1 tablespoon of soy sauce and sesame oil. Set aside.
  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add minced garlic and grated ginger to the skillet and stir-fry for 1 minute until fragrant.
  • Add the marinated shrimp to the skillet and stir-fry for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the sliced red bell pepper and stir-fry for 2 minutes until slightly softened.
  • Add the fresh spinach to the skillet and stir-fry for 1-2 minutes until wilted.
  • Return the cooked shrimp to the skillet and toss everything together.
  • Season with 1 tablespoon of soy sauce, salt, and pepper to taste. Stir-fry for another minute to combine all the flavors.
  • Serve the spinach and shrimp stir-fry over cooked rice and enjoy!
