Ingredients
- 1 pound of shrimp, peeled and deveined
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 2 cloves of garlic, minced
- 1 teaspoon of grated ginger
- 4 cups of fresh spinach
- 1 red bell pepper, sliced
- 1 tablespoon of vegetable oil
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a small bowl, marinate the shrimp with 1 tablespoon of soy sauce and sesame oil. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and grated ginger to the skillet and stir-fry for 1 minute until fragrant.
- Add the marinated shrimp to the skillet and stir-fry for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the sliced red bell pepper and stir-fry for 2 minutes until slightly softened.
- Add the fresh spinach to the skillet and stir-fry for 1-2 minutes until wilted.
- Return the cooked shrimp to the skillet and toss everything together.
- Season with 1 tablespoon of soy sauce, salt, and pepper to taste. Stir-fry for another minute to combine all the flavors.
- Serve the spinach and shrimp stir-fry over cooked rice and enjoy!
