  • 1/2 cup of crumbled feta cheese
  • 1/4 cup of grated Parmesan cheese
  • 1/2 cup of chopped onion
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of nutmeg
  • 1 package of store-bought pie crust (2 crusts)

  • 1 package of store-bought pie crust (2 crusts)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1/2 cup of chopped onion and cook until softened, about 5 minutes.
  • Add 2 cloves of minced garlic to the skillet and cook for an additional 1-2 minutes.
  • Stir in the thawed and drained spinach, 1/4 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of nutmeg. Cook for 2-3 minutes, then remove from heat and let cool slightly.
  • Unroll one of the store-bought pie crusts and place it in a 9-inch pie dish. Press the crust into the bottom and up the sides of the dish.
  • Spread the spinach mixture evenly over the pie crust, then sprinkle 1/2 cup of crumbled feta cheese and 1/4 cup of grated Parmesan cheese on top.
  • Unroll the second pie crust and place it over the filling. Trim and crimp the edges to seal the pie.
  • Cut a few slits in the top crust to allow steam to escape during baking.
  • Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown.
  • Allow the pie to cool for 10 minutes before slicing and serving. Enjoy!
