- 1 block of extra firm tofu, pressed and cut into cubes

- 1/4 cup apple cider vinegar

- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh lemon juice
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh oregano
- 1/4 cup chopped fresh thyme
- 1/4 cup chopped fresh rosemary
Instructions
- In a bowl, whisk together 1/4 cup olive oil, 1/4 cup apple cider vinegar, 2 cloves minced garlic, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1/2 teaspoon dried thyme, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 cup fresh lemon juice to make the marinade.
- Add the cubed tofu to the marinade, making sure it is well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill or oven to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated tofu cubes onto skewers, alternating with chopped fresh parsley, mint, basil, oregano, thyme, and rosemary.
- Grill or bake the skewers for 10-15 minutes, turning occasionally, until the tofu is lightly charred and cooked through.
