  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 8 oz soft shell crab, cooked
  • 1 ripe avocado, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha
  • 1/4 cup tempura batter
  • Vegetable oil for frying
  • Soy sauce, pickled ginger, and wasabi for serving

Instructions

  • Cook the sushi rice according to package instructions. In a small bowl, mix the rice vinegar, sugar, and salt. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let the rice cool to room temperature.
  • In a small bowl, mix the mayonnaise and sriracha. Set aside.
  • Lay a bamboo sushi mat on a clean surface and place a sheet of nori on top, shiny side down. Moisten your hands with water and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
  • Place a layer of sliced avocado in the center of the rice, followed by the cooked soft shell crab. Drizzle the spicy mayonnaise over the crab.
  • Roll the sushi tightly using the bamboo mat, starting from the bottom and rolling away from you. Seal the roll by moistening the top border of the nori with water. Repeat with the remaining ingredients.
  • In a small bowl, prepare the tempura batter according to package instructions. Heat vegetable oil in a deep pan over medium-high heat. Dip each sushi roll in the tempura batter and carefully place it in the hot oil. Fry until golden brown, then remove and drain on paper towels.
