Ingredients
- 1 pound of linguine
- 2 pounds of fresh mussels, cleaned and debearded
- 4 tablespoons of olive oil
- 6 cloves of garlic, minced
- 1 teaspoon of red chili flakes
- 1 can (28 ounces) of crushed tomatoes
- 1/2 cup of white wine
- 1/4 cup of chopped fresh parsley
- Salt and pepper to taste
Instructions
- In a large pot, bring salted water to a boil and cook the linguine according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red chili flakes, and sauté for 1-2 minutes until fragrant.
- Add the cleaned mussels to the skillet and stir to coat them with the garlic and chili mixture.
- Pour in the crushed tomatoes and white wine, then cover the skillet and let the mussels simmer for 5-7 minutes, or until they have opened. Discard any mussels that do not open.
