Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of cornstarch
- 1/4 cup of vegetable broth
- 1 tablespoon of vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of snap peas
- 3 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 1 teaspoon of red pepper flakes
- 2 green onions, sliced
- Cooked rice or noodles for serving
Instructions
- In a bowl, combine the cubed tofu, soy sauce, sesame oil, and cornstarch. Toss to coat the tofu evenly and set aside.
- In a small bowl, mix the vegetable broth with 1 teaspoon of cornstarch and set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
- In the same skillet, add the bell peppers, broccoli, and snap peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add the minced garlic, grated ginger, and red pepper flakes to the skillet. Stir-fry for another 1-2 minutes until fragrant.
- Return the tofu to the skillet and pour in the vegetable broth mixture. Cook for 1-2 minutes until the sauce thickens and coats the tofu and vegetables.
- Sprinkle with sliced green onions and serve the spicy tofu and vegetable stir-fry over cooked rice or noodles.
