Ingredients
- 1 pound of large shrimp, peeled and deveined
- 1/4 cup of olive oil
- 4 cloves of garlic, minced
- 1 teaspoon of red pepper flakes
- 1/2 cup of white wine
- 1/4 cup of fresh lemon juice
- 1/4 cup of chopped fresh parsley
- Salt and pepper to taste
- 8 ounces of linguine pasta
Instructions
- In a large pot, bring water to a boil and cook the linguine according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque.
- Pour in the white wine and lemon juice, and let it simmer for 2-3 minutes to reduce slightly.
- Season the shrimp scampi with salt and pepper to taste, then stir in the chopped parsley.
