  • 1 cup of cooked rice
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn kernels
  • 1/2 cup of diced tomatoes
  • 1/4 cup of chopped cilantro
  • 1 avocado, sliced
  • 1/4 cup of sour cream
  • 1 lime, cut into wedges

  • In the same skillet, add the black beans and corn. Cook for 2-3 minutes, until heated through.
  • To assemble the burrito bowls, divide the cooked rice among 4 bowls. Top with the black beans and corn mixture, cooked shrimp, diced tomatoes, chopped cilantro, and sliced avocado.
